This is one of my favorite things to eat!!! No mess, and yummy Salmon in Foil Ingredients: 4 pieces of salmon 1 can diced tomatoes, drained 2 scallions, minced (if you don't have any, just add about 1/2 minced onion and 4 cloves of minced garlic) 1 tablespoon of italian seasoning 1/4 teaspoon of thyme if you have it 1 teaspoon of salt 1/2 teaspoon of pepper 2 tablespoons of olive oil Method: 1. Preheat oven to 400F 2. Mix together all ingredients except salmon. 3. Take 4 medium pieces of aluminum foil and fold up the edges so no liquid will leak out. 4. Place a piece of salmon in each piece of foil. Add equal parts of the tomato mixture on top. 5. Fold all the way over and pinch all the edges shut so no steam escapes. 6. Put on baking sheet and into the oven for 25 minutes. Serve with Rice, using the liquid in each package to go overtop This is absolutely excellent and one of my favorites The salmon gets very, very moist and the flavor is spectacular.

oh yeah, this sounds great. i love salmon! we have a great recepie for it too. it's a little spicier than this one, but it's good to have several different ways to cook salmon. YUM!!!

Well, salmon is one of those "super-foods" which are packed with good stuff....I'm always looking for new ways to prepare it...thanks Shawna. Seems like you are reading my mind (and my taste-buds!)

Ive never really gotten into Salmon, although I love all kinds of fish... Maybe I should get some and try this though,,, I know it is super good for you Thanks Shawna!
