Moravian Sugar Cake: My Pennsylvania hometown was founded by Moravian Missionaries in the 1740's. Although I, myself was not raised in the Moravian Church, my town was, and still is, steeped in Moravian traditions-especially at Christmas time! This recipe is one of my favorites, as it reminds me of my childhood. It makes 4 9x9 cakes (or 2 13x9 cakes) which are delicious for breakfast or any time of day. Enjoy! Cake: 1 cup mashed potatoes (instant works just fine) ½ cup margarine or butter 1 cup sugar 2 eggs 1 teasp. salt 4 cups flour 1 cake of yeast (2 packets) 1 cup warm water Topping: ¼ pound of butter 1 pound brown sugar cinnamon to taste Cream sugar, margarine or butter, and salt. Add eggs and mix. In a small bowl, dissolve the yeast in the warm water. Add the mashed potatoes and dissolved yeast to the sugar/butter mixture. Stir in the flour. Grease 4 8x8 or 9x9 pans and place the dough into the pans. Allow cake to rise in a warm dark place until the dough has doubled in size. With the handle of a wooden spoon, punch holes in cake approximately ½ inch apart. Place butter pats in the holes. Sprinkle brown sugar and cinnamon over the dough. Bake at 350º F for 25 minutes.

That reminds me of potato cakes my mom used to make. Some would be just salty and some would be sweeter. OH, wow. And I happen to have mashed potatoes in my fridge. Hmmm, lets see if I have the rest. Maybe brown sugar is the thing I need

Oh, another thing about potatoes. I don't have the recipe, I wish I did. My mom used to make a potato roll. A dough is made with flour, potato and a few other things. Roll it out flat, spread peanut butter and roll it up...OMG, I would always look forward to that...ymmm. I'll have to ask if my sisters have this recipe. A lot of things mom made had no recipe, she just made them.

Yeah, the potatoes in the cake are really undetectable. They have such a mild flavor that they blend in well with the other ingredients. I think they are mostly there for texture.....or maybe to add bulk to the cake, whatever their purpose, the cake is super yummy! I've made it many times.

hehehe, ok when i have a day of splurging I will consider this,,, after all the peanutbutter is good for you, right? i am trying to be a good girl this holiday season, I was good this past week, I made fudge at my moms house and I didnt even lick the spoon, and fudge is my FAVORITE!!!! Hurry up Christmas so I can pig out LOL!
