Had this for supper and really enjoyed it Very filling! Only thing is I would make a little more dressing next time...maybe 1/2 the dressing recipe and add it... Ingredients: Dressing: 2 tbsp olive oil 2 tbsp lemon juice 1/2 tsp dijon mustard 1/2 tsp pepper 1/4 tsp salt 3 cups cooked rice, cooled slightly 3 tomatoes, chopped 1/2 can black olives 1/2 red onion, chopped (optional) feta, crumbled 1 can your choice of bean, rinsed and drained (I used Lupini) 5 cups lettuce Method: ~Combine dressing ingredients and set aside ~Add all ingredients into a medium sized bowl except lettuce ~toss with dressing ~Serve on a bed of lettuce ~Good the next day cold as well Very good and very good for you too!!!

I am not much on Greek food, but this sounds really good. Maybe I should open my buds to new tastes..
