This recipe is quick, easy and best of all GLUTEN FREE!!!!! 4 Large chicken breast halves,boneless, skinless (about 1 ½ lbs) 8 oz (1 cup) crushed canned pineapple, drained 8 oz (1 cup) jar of mango chutney,found in any Indian grocery or the International aisle of the supermarket. 1 Tbsp curry powder 1 Tbsp lime or lemon juice (fresh is best) 1 Tbsp olive oil Lime slices and cilantro for garnish 1) Heat the grill to Medium heat (I used the George Foreman) With a sharp knife, make a pocket in the thickest part of the chicken breast. 2) In medium bowl, mix the mango chutney, pineapple, curry powder, and lime or lemon juice. Divide mixture in half, reserving half for later. 3) Add the olive oil to half of the chutney mixture. Stuff 1 Tbsp of this chutney mixture into the chicken pockets. Coat the chicken with the rest of the chutney/oil mix. 4) Cook chicken on hot grill until juices run clear when pierced with knife. Arrange chicken breasts on dinner plates and top with the lime slices and cilantro. Serve with the reserved chutney mixture (that has not been touched by raw chicken meat.) This recipe can be served with store bought coconut rice, or any rice, quinoa grain or whatever starch you prefer. I made this entire meal in less than 30 minutes, start to finish. Next time instead of using olive oil, I'm going to use melted coconut oil to add even more flavor to this sweet slightly spicy dish!

Oh,Sloan...that is so right. It's tough finding yummy, easy GF meals to make, isn't it? I get soooo tired of chicken breast and broccoli every night...lol Hope y'all enjoy it!

Mmmmmm curry chicken is Yummmmmyyyy! I dont know about gluten much,,, not allergic to anything so I dont have to worry about that I guess,,, but this sounds delicious! I made curry chicken breast and yellow rice a few days ago,,, its sooooo goood!!!

Well, Star, gluten can be a tricky thing to avoid if you're allergic or if you have celiac disease or IBS. It is in EVERYTHING, since it comes from wheat, barley, rye and most oats. (Did you know they put wheat components in everything from ketchup to frozen dinners?)So, I usually don't eat anything I didn't make myself. Sometimes it really stinks (especially when our doctor at work is buying us lunch and I have to decline,) but it beats the other unpleasant consequenses..lol

Aww, I know about celiac disease... A good friend of mine recently discovered she has it also... I didnt know they put gluten in ketchup,,, even organic ketchup? I will have to look at the labels better.... I dont have allergies but I love to eat as "whole" as I can. I do sprout wheat, groats, mung beans, and other grains, so I know I am not allergic to them. I have become more and more organic lately,,, all except for the occasional trip to Doris's Italian market to eat something sweet, but that really is only once a month or maybe twice... I love cooking and eating stuff from my garden.... I cant wait to start feeling better so I can start my fall garden actually.... As soon as I can sit for a little while I am out there... I have lots of seeds that are patiently waiting to be planted... I was looking through my box of seeds yesterday and just getting excited,,,, soooooon!!
