I don't really measure this so I am just going to give you the ingredients I use and you can play around with this recipe as you see fit. Just remember that the more heavy cream you use the soupier it will be.... Cauliflower Heavy Cream Sour Cream Butter Salt & Pepper Basically you boil the cauliflower until it is soft then you drain the water and put it back in the same pan you cooked it in (it will keep it hotter longer if you do) you add the sour cream, butter, heavy cream, and salt and pepper to taste. I will usually use about a stick of butter for a large head of cauliflower and a cup or 1/2 cup of sour cream with a 1/4 cup of heavy cream but like I said play around with it. When you have all the ingredients in the pan you use a hand mixer and blend it until it is soft. You might want to hold off adding the heavy cream until you mix everything so you know how soupy it will be and just eyeball that. This is a really YUMMY alternative to regular mashed potatoes and it is really low carb too. I do buy organic everything, I do that anyhow as much as I can anyway so it is healthier for me. The kids don't like it but I swear by it and I know some people watch their sugar/carb intake like me so when I found this recipe I no longer craved potato's. I love cauliflower though, and yea it is like mashed potato's, it does taste a little like cauliflower but if you like it then who cares! Enjoy! Star
