This is one of my FAVORITE things to eat... I have just encountered this ladies blog on Yahoo 360 and she inspired me to write about some of my favorite recipes, so here,, of course,, is the perfect place to do that...
Anyhow here it goes...
You need:
4 whole boneless skinless chicken breasts
5 lemons
1 stick of salted butter
2 cups of breadcrumbs (I like Italian, u can use whatever u like) (approx)*
3 eggs
1/2 cup olive oil (approx)*
Spices to taste, Garlic, Oregano, Rosemary, Thyme, Pepper, and a pinch of salt, or a good Italian seasoning will work great.
*I really do not measure this stuff, I am guesstimating here, you can alter this as you see fit.
First you take the chicken and cut the breasts in half, and trim the fat off the sides. You really want it to be just the meat and no fat on it at all.
You then put one piece of it on a wooden cutting board and lay a piece of saran wrap over it. If you have a cooking mallet use that, if you don't you can use the bottom end of a heavy coffee cup, that works well. If you use the coffee cup just make sure you use saran wrap and it is not cracked at all or it could break and the saran wrap keeps it from going everywhere. I haven't had one break but it is possible I am sure. So basically you take the mallet or bottom of the coffee cup and hammer the chicken with it. You want to tenderize all of it, but not so much that it falls to pieces.
Then you have some preparing to do...
~Prepare the 3 eggs and about a teaspoon of water, mix it up and then put it on a plate that it can hold. You are going to use this egg wash to hold the breadcrumbs on the chicken.
~Prepare the breadcrumbs and whatever spices you have, I use garlic, pepper, and thyme, rosemary and oregano from the garden, but you can use whatever you have on hand. I mix it all together and place it on another plate.
~Prepare the lemons, I will cut each lemon in half and squeeze the juice out of them into a bowl. I use a fork to do this but a juicer would work great. I just don't have one. Then also put the butter in a glass bowl as you are squeezing the lemons and melt that in the microwave (about 35 seconds). When it is melted and the lemons are squeezed I will mix them together. I keep one lemon to cut in slices to garnish with so only squeeze 4 of them.
After you have tenderized all of the pieces of chicken you heat the frying pan up with a few teaspoons of olive oil in it. When it is hot enough I put the burner on about 7 as you don't want to scorch it but rather cook it slowly. Then you dip the chicken breast in the egg wash, both sides and then dip it in the breadcrumbs both sides and then place the breast in the hot frying pan. You cook it on both sides until golden brown, you will need to add a little more oil as you are cooking because you do not want it to cook dry. I use extra virgin Olive oil as it is light and actually healthier for you then just regular vegetable oil.
After you are finished with cooking the chicken you then take the chicken and place it in a shallow baking dish. Then you pour the butter and lemon mixture over the chicken breasts and place the lemon slices on the chicken, I usually put 2 pieces of lemon on each piece of chicken. You then bake the chicken for 30 minutes or so to let the lemon and butter soak into the chicken.
After that you take it out and serve each piece on a plate and you can even pour a little bit of the juice over the chicken breast or if you eat it with mashed potatoes you can use that juice to put on the potatoes. It is absolutely YUMMY like that! I have taken to eating my cauliflower-masheys as a substitute for regular potato's, because cauliflower is lower carbs then potato's but both are great. I also like to serve corn with this meal, it just seems to go well together.
I would love to hear if anyone makes this, I am wanting to eat some just typing this out! I am making spaghetti tonight though so I wont be cooking this but maybe soon! It is definitely a process to cook but oh so worth the time it takes!
