ok, this is really yummy and easy too. star, this could be a great idea for those pineapples ya got coming up. lol.
~pineapple fritters~
1 or 2 cans of pineapple chunks (drained and patted dry on towel)
yellow cake mix
oil (to fry)
heat oil in semi deep pan, as if to deep fry anything. (for pineapple chunks, it would only need to be two or three inches deep). mix the batter just a wee bit thicker than you normally would. not too thick, but thicker, ya know? drop the pineapple chunks in the batter, then drop one by one in the oil. fry until golden.
(great with powdered sugar on top)
(could also work with peaches, apples or cherries too)
