I am really going through my recipe box.
Another cookie recipe.
2 C sugar 1/2 C milk 1/4 C butter 1/3 C cocoa 3 C quick cook oats (I use regular oats- works well too) 1/2 C coconut or nuts (I don't use nuts..family don't like) 1/2 C peanut butter 1 t vanilla
Combine sugar, milk, butter, cocoa. Boil 1 minute (watch the time) Remove from heat and mix in the rest (should harden as you stir). drop by teaspoon on wax paper.

MMMMMmmmm.....This sounds super yummy! Reminds me of something my mom used to make, except it had grated apples instead of the peanut butter. I am definately going to try this recipe, since my store just started carrying GF oats. Thanks Saffy!

The are sweet enough to satisfy a sweet tooth, but since it has oats, it has to be good for you, right.

LOL yea,,, its good for you cause it has chocolate in it hehehehe everything with chocolate is good for you, right??? I think thats whats on MY food pyramid anyway hehehe

Having just looked at these...guess who'll be shopping tomorrow?...lol! Thanks Star...I've been working my way through cookie recipes for a while but haven't found anything that grabs me yet...until now:-)

I love these cookies! My grandmother used to make them for me every time I'd go visit her. Gosh, I can remember exactly how they tasted and how much fun it was to sit with her and eat them. Thank you for sharing the recipe and for the beautiful memory that it brought to me.

Malory, my daughter has been asking me lately for them. Thanks for bringing it up again, no excuses now. They are so easy to make...getting out my oats..I need peanut butter. A shopping I will go.
