there's all kinds of comfort food and this is just one of many. a twist on the old fashioned meatloaf. yummIE!
stuffed meatloaf
1-2 lbs. ground beef (or prolly turkey, too) 1 large bell pepper 1 large onion 2 green onions 2 garlic buds 1 large tomato 12 medium mushrooms seasoned croutons multitude of seasonings of preference
dice 1/3 of the onion into fine bits and add to the ground beef. add generous amount of seasonings to meat (garlic, onion, accent, mrs. dash, etc.). crush croutons completely and add crouton dust to meat and mix thoroughly with hands. in another bowl dice mushrooms, tomatoes, onions and bell peppers and garlic buds; mix in various seasonings into veggies. take 2/3 of the meat and lay out on tin foiled cookie sheet and flatten out, but make the edges come up like a bowl to make a shell for the veggies. fill with veggie mixture into a heap. take remaining meat and thin out into a cover for the loaf. pinch and play until the meatloaf has no holes. cover the top with your favorite spagetti/marinara sauce. and bake at 350 until done. (i'm an eyeballer, so i'm not sure how long). it's not like the ordinary version..............better! enjoy!!

OOUUUUUUUUUUU that sounds so good. I love meatloaf anyway. But...uh oh, my family does not like meatloaf, so if anyone makes this soon, can I come over?

mmmm sounds yummy! i dont know if i ever made meatloaf,,, ive eaten it but i dont think i ever made one... have to try it!!

My mom always said, if you have hamburger, you can use just about anything else to add to it. I love to make it myself.

hehe smart mom!!! I saw this meatloaf seasoning thing when i was at the meat market the other day,,, but i opted for other stuff,,, maybe next time i go... i need to try it... i made baby back ribs last night, (first time in forever) and they were GOOOOD!!!!!
